Breakfast is the most

important meal of the day.

It can make or break your day.

So I believe

in starting the day right

with a hearty breakfast

that tastes good,

feels good, and looks good.

My name is Thevi

about six years ago.

I've just been posting recipes,

sharing, you know, tips

on how to make life easier

at home when you're cooking.

What is it that you need?

I'm going out

with some of my friends later

but I invited them

to come over for breakfast.

So, you know, maybe you can

give me some tips on how to make

something light for me and the boys.

- Something easy?

- Something easy definitely.

It is my off day.

- It is your off day.

- It has to be fast.

- I'm not good at cooking.

- It has to be quick.

Cooking was a chore because

my grandmother, who brought us up

she used to make us, you know

Okay, so you either cook,

you clean the house

or you clean the garden.

In order for me to love this,

I better start enjoying cooking.

You gotta love it.

If you don't love it,

it's not going to work.

Okay, I can. Sounds like a plan.

But first I need to give you an apron

because you're going to be

my assistant

- and I'm not gonna cook. Okay?

- Yes, Boss.

We're going to just do a few dishes.

What do you have in mind?

Something easy

because I do know how to cook.

Yeah, I've been I've been eating

for about four decades now.

I'm pretty experienced at that.

Cooking, not so much.

I mean, I can cook to survive,

to save a life, yeah.

But, you know, if you're expecting,

like, Masak Lemak Cili Api

and all these,

they're outta my league.

So light, easy,

and it also has to look good?

- Yes. Yeah.

- Okay?

So I'm gonna suggest folded eggs

on avocado mashed and toast.

And then we're gonna have

some hummus.

And then we're going to end it

with a Greek bowl.

I asked Thevi to help me

with some breakfast stuff.

Breakfast meals. I love breakfast.

Basically around the clock.

I've had cereal, scrambled eggs

and things like that.

Breakfast is the most important part

of your meal.

You know, it's the first thing you do

when you start your day.

- So you're ready?

- Yes.

Okay. So for the first dish

we're gonna do folded egg

on mashed avocado on toast.

I'm hungry already.

So first up, I need you

to help me get those avocados.

- And when you go to the grocers

- Okay.

you see two types of avocado.

I mean, you see the ones

that are green, okay?

And of course, you see the ones that

are slightly on a darker version.

The green ones are still unripe.

They're hard, they are raw,

so you can't eat them.

So you can put this aside.

But then you look at the

the darker green ones.

- Okay, they're nearly black.

- Yeah.

So if you touch it,

it's got a slight soft touch to it.

So that's ready.

I try to be a fast learner.

In music I spend a lot

of time learning

because I didn't have

a lot of mentors.

I just have to learn by myself.

And it took a lot of time.

So now I realized that learning

from a teacher, from someone

makes it much faster.

How do you going to How are

you gonna cut your avocado?

- Well, the seed is

- Okay come let me show you.

So what you do is you slice it

and you go right all across.

You twist it

and then you have it.

Right. Perfect.

You know, I've seen pictures

of avocado cut open

with and without the seed

so I wasn't quite sure

how to remove the seed.

So I want you to do the next one.

I'd like to see

how you remove the seed.

I removed it, but, you know,

it kind of ran away from me.

I hope he's in a better place now.

- That's fine. It's okay.

Scoop out the flesh.

Oh, we needed some lemon.

So can you get

grab a lemon for me?

Okay. What happens is when you

squeeze this lemon

it maintains the color

of your avocado.

And also gives some freshness

to the avocado mash.

- Understood.

- A pinch of salt

pepper, put a splash of olive oil

about a tablespoon.

Eyeball it if you I mean

- Agak-agak, you know? Yes.

- There you go.

- Agak-agak. Okay. Yeah.

- That's about a tablespoon.

I'm sure everybody would agree

from your parents

you learn how to eyeball things.

You know, you don't really measure.

My grandmother used

to dump everything

and if she had that little bit

of flour left in the bag, she said

"Just dump it in."

With a dash of love,

everything turns out fine, you know?

So I think that's what I learned

from my grandmother.

So usually when the avocados are

a bit more softer

it's easier to mash.

But this one seems to need

your muscle, so you need to do it.

You see, this recipe is easy.

But how come

this requires some effort?

- Let's just

- Some effort. This is easy.

Trust me.

Can you, like,

put some speed on it?

'Cause your friends are going to come

and I really need to go out.

And then you wanna just put it aside.

- Now, let's do the toast first.

So today we're gonna use a sourdough.

You've got two friends

coming over, you said?

That'd be easy, right?

So now we're gonna prep the eggs.

So maybe get two eggs,

grab some milk for me.

Now, so you're gonna crack

two eggs into this bowl.

You know I can do this

one-handed, right?

Oh, not bad. Not bad.

Okay, I hope your friends

like the eggs crunchy.

I hope so. I hope so.

Let me just take out the shell, okay?

Grab some milk for me.

Excuse me

this is yogurt.

- In theory

- I know.

Yogurt is milk.

I know sorry.

And then you're going to put

about three tablespoons of milk.

- Okay.

- Some salt and pepper and whisk it.

Okay, you want it

to be fully incorporated

because you want your eggs

to look creamy.

How do you know when

it's fully incorporated?

When you see those pockets of white

you gotta whisk it even more.

Okay, that's good.

So second dish,

we're gonna make the hummus.

Hummus. Hummus.

It's on the inner voice. Hummus.

I like it. I like it.

It's a bit of an acquired taste.

As a snack is great. We usually

have it as a spread at home.

You know, just put it on

some bread and peanut butter and

it's good to tide you over

for at least a couple of hours.

So basically, hummus

is blended chickpeas.

Well, we're gonna make

this dish look pretty.

- Okay.

- Thevi's Kitchen style.

- Okay?

We need to get garlic, paprika

- cumin powder.

- I think all of it is here.

So what I need now is

a clove of garlic

for this bowl of chickpeas. Okay?

These are cooked chickpeas.

So basically, canned chickpeas.

- Let's say I buy a can of chickpeas.

- Okay.

How do I tell

if it's raw or it's cooked?

Canned chickpeas is always cooked.

- Okay, so it's easy.

- But Yeah, it's easy.

This is something that I stole

from my mother-in-law.

You make magic from your pantry.

Back then, they used to have

just, you know, canned food.

You look at a can of soup, you think,

"Oh, how exciting can it be?"

When you put everything together

the simplest dishes become

the most comforting delicious meal.

So we got a clove of garlic. Great.

- Almost.

- Yeah. Let me teach you

- how to Where?

- Please, go ahead.

Where's the rest of the garlic?

Oh, here. Okay.

Like that.

And that's it. Easy. Done.

You're just a treasure trove

of information.

- Okay, let's just put two, in case.

A teaspoon of cumin powder

and then just

half a teaspoon of paprika.

Don't forget to remove that seed.

You don't want any bitter seeds.

Pour some olive oil in

and some pepper.

the next part of the dish

- which is roasted chickpeas.

So I need another bowl of chickpeas.

So what we're gonna do is

we're gonna use a paper towel.

We need to dry them really well.

If not, you're going to

end up with an expl*si*n.

So you wanna dry them for me.

Try not to lose the chickpeas, yeah?

I like air-frying stuff

'cause it's easy, less messy.

When I started off,

it was just a recipe blog

you know, it was something

for me to do for fun.

But now I feel that it's

it's slowly taking off, you know?

I've got a bunch of great followers.

I try to keep them entertained

with, you know, a little quirk

of some of my funny things

that happened in the kitchen.

Keep them informed with

the new tips that I've discovered

how to do the folded egg.

Everybody seems to be caught up

by the, you know, the eggs.

They actually send me videos

and pictures, then they say

"Oh, my god."

And I say, "It's great," you know?

I hope, you know, this can continue.

I can keep them entertained,

you know? Yeah.

So while we wait for the chickpeas

to roast in the air fryer.

- Okay.

- We're gonna do some jammy eggs.

- Jammy eggs, huh?

- Jammy eggs, yes.

Now, it's not jam

but it's like You know, those eggs

that are set outside

and then you've got this

beautiful runny yolk.

- Oh, okay.

- It's going to be delicious.

I'm gonna be Yeah, I like

I like runny yolk.

Yes, me too. My favorite.

I love eggs.

So now we're gonna boil

some water first.

Is it really important

for you to be boiling?

It doesn't have to be

like those drastic boils.

- Yeah.

- It's gonna be gentle boils.

Let's put the eggs in one at a time.

We're going to cook it

for six minutes.

Have you started your clock?

- Got it.

- Okay, so for six minutes.

I'm gonna go and get the

avocado and the ice bath.

I can see parallels of making a meal

and putting a song together.

You know, there's a process, yeah?

There are parts where you improvise.

There are parts where

you have to follow the structure

or the SOP, maybe you call it.

You're creating something

for someone to consume.

And it's quite interesting to see

the similarities and differences.

We're gonna use this ice bath.

Take out the eggs one at a time,

and place it inside here.

Okay, so let it chill for a bit.

Shall we toast the bread?

What kind of breads do you like?

all we Malaysians

we start with regular white bread.

to experiment with wholemeal.

Yeah, and I think during the lockdown

it was when everybody started

making their own breads at home.

started making sourdough bread.

I buy from them, and I just

So while we wait for that to toast

we're gonna make your eggs.

Yeah. This is my favorite skillet.

Look at that.

I saw you do this just now,

so I'm gonna try.

But be careful when you're holding

the cast iron skillet when it's hot

you won't be looking so fancy

when you're holding the pot lid

Give chance, la.

It's like scramble,

but you're just folding them.

So you like to push it.

So you push it

in one circular motion.

I really thought it was going

to be like, you know, the omelet

the one that's runny inside,

I thought it was folded eggs, but no.

Like, it's somewhere in between

an omelet and scrambled eggs.

So we're gonna take

the mashed avocado. Okay.

You look like a pro.

So we're gonna put

a little bit of pepper

and then maybe you wanna add

some of your greens on top?

- Okay, good.

- Yeah, just make it pretty.

- And then we'll do the next one.

Oh, you're pretty good at this, huh?

I'm pretty good at scrambled eggs.

I'm pretty good at making stuff

that doesn't look nice.

Easiest scrambled eggs, taste good.

It is good, but it doesn't have

to look good.

You know, when

when it comes to breakfast

sometimes I'm a bit more practical.

You know, I just wanna get a certain

amount of good nutrition in me

you know, in the shortest

possible time.

Eggs is good.

Okay. Let's do this.

It wasn't that hard, you know.

But I know it impressed people

when you say

folded eggs for you."

What I usually like to do is, like,

I like to crack them

I will leave them in.

When you crack the eggs, sort of like

you know, the water goes through

and leaves like a pocket

so it's easier to peel.

you've got a beautiful jammy egg.

You wanna do the honors?

- First, I gotta pick the right egg.

I think the pressure test

was definitely the

the jammy eggs.

It's not something easy to do.

and peel it gently, yeah?

The test the real test is

when you slice it open.

maybe two tablespoons

and do a a nice spread.

I like to sprinkle

a little za'atar. So basically

it's a Middle Eastern spice blend

just brings the whole dish to another

- level together altogether.

And then we're gonna add a drizzle

of olive oil and

a nice piece of flatbread

here at the side.

It's gotta have some greens,

you know?

So it looks pretty, you know?

Now, for you to plate it, okay?

Smells lovely.

So your friends are going to be

impressed enough by this, huh?

I think anything more than

scrambled eggs, will impress them.

I don't look at plating so much.

As long as the food is good.

But, you know, there's definitely

if it's good and it looks great.
