If we see wings,
we're going to expect that flavor,
and once you eat it and it's cake,
it's like your brain goes into error mode.

I've actually never made wings before,
so I really need to find a way
to stack them naturally
and create that negative space
between the wings.
I think modeling chocolate
is the best way to go, but we'll see.

[Raina] I am doing a red velvet cake
with a cream-cheese-buttercream frosting
mixed with red-velvet crumbles.
[Henderson] Ooh.
And red velvet cake
is not red chocolate cake.
Real red velvet cake
should have buttermilk involved,
vinegar, and baking soda.
There is chocolate in red velvet cake,
but it should not be a lot.
If it's more than two tablespoons,
you ain't got red velvet.
If it tastes like chocolate cake,
it's wrong.
-Are you a big fan of lasagna?
-I am. I love lasagna.
Me too. [chuckles]
My biggest concern
with making this lasagna cake
is making sure
that I do not make it too tall
and color matching.
But I'm really big at pushing through.
I have overcome so much in my life.
My first storefront,
we were past due on the rent,
and I lost the entire bakery.
But it's extremely important to me
to motivate my family
and show them that I always keep pushing.
So at the end of the day,
I've learned that I don't have to have
a storefront to be a business.
So I started doing cakes from home.
Hey, Henderson, which cake are you doing?
I'm making a, um, hazelnut cake
soaked with, uh, coffee espresso,
and dulce de leche white ganache.
[Timmy] That sounds delicious.
[Henderson] Dulce de leche
is very popular in my country.
-Also, it's my daughter's favorite flavor.
-[Timmy] Oh yes.
{\an8}I have a little daughter.
She's ten years old. Ivana.
She's my big inspiration,
and dulce de leche is her favorite flavor.
So I always try to keep all the flavors
that remember my family, my country,
my daughter, in all my cakes.

The difficult part of my cake
will be the crust
because it's really hard to replicate
the crunch and the color.
I need to spend a lot of time
for making it look perfect.
I wanna make sure I don't make any mess.

I'm doing a banana cake
with salted-caramel drizzle

and it's gonna be a challenge
to do in eight hours.
But I love challenges
and I wanna prove for my son
that I am the best at what I do.

and now I'm going to go in and hand sculpt
every little detail and wrinkles and folds
that the chicken wings actually have.

naturally all look different,
so it's really helping me, because I don't
have to make them all look the same.

-I feel good. Once I start layering this...

...and putting all that in between it
and painting and stuff...
For my lasagna,
I'm making individual noodles
made from modeling chocolate
followed by a thin layer
of cream-cheese frosting.
Then I put cake.
It's lasagna time.
To make the ground beef,
I will use Cocoa Krispies cereal
with melted-chocolate candy,
and I individually put those
around the side
to give us the meat texture.
I think we got this, Timmy.
[Timmy] Looks so good.
Wow.
That's some confidence right there.

After carving, the next step is painting.
So excited.
So for making the color match,
I use edible colors.
It's my favorite part, painting.
It's really hard to make the color match.
I think the secret is you need to make
different layers with different colors.
For tiny details,
you can use a paintbrush.
At home, I use
my wife's paintbrush for makeup.
She hate me, but it's the best ones.

getting the bones on

To shape the bones,
I am using modeling chocolate
and adding a thin piece of wire
on the inside
and then Fl*ttening it out
to look like a bone.
And then I'll just use a sculpting tool
to add texture on the ends
of where the marrow would be.
-[Raina] How we comin'?
-I'm working on the bones.
I'll let 'em firm up before...
I'll paint it all at the same time.
Yep. Gotcha.
I can attach the bones to the outside
with a thin layer of modeling chocolate
over top that will hold it all together.
-Raina, what do you think about that?
-It looks amazing.
It looks really, really good.

But, when I do that,
unfortunately, it's the wrong red.
-It needs to be a little darker, I feel.

Bad decision. I shouldnta used no jam.
It is way too translucent,
and its color is different,
so I need to go in
and do major color matching.
[Timmy] I think it needs green
to, like, k*ll that red.
-[Raina] Yep.

The green does exactly what it's supposed
to do, and it tones the red down,
and we end up
with the perfect color marinara sauce.
That is way better.
The green definitely did it immediately.

so I use fondant red food coloring,
piping gel, and cornstarch
for make the texture of the sauce.
-I think I got the color.
-Yeah. Yeah, yeah, yeah, yeah.
Now, it's time to paint it.
I think this is more hard because
I have to make it look like real pizza,
and we need perfect color match.
-That actually looks like the wing sauce.
-[Henderson] Yeah.
It works out that Henderson's pizza sauce
is the same color as my wing sauce.
How much do you have of that?
Oh, you have a lot.
Perfect.
So I'm using his sauce
and painting it over my wings,
and two birds with one stone.
Great teamwork.

with a fresh mint soak
with strawberry
Swiss-meringue buttercream.

I made a hazelnut cake,
soaked with coffee,
with a dulce de leche ganache
for the filling.
[Michael] It's so hard to believe
that this is... this is not chicken.

[Raina] I have a red velvet cake,
cream-cheese-buttercream frosting,
and the marinara sauce is a strawberry jam
mixed with red-velvet crumbles.
That flavor of the red velvet,
out of this world. Unbelievable.
[Michael] I could just eat this
for three days.
What did you use
to make the meat crumbles?
-[Raina] Cocoa Krispies cereal.
-I mean, it looks like sausage.
Usually, sausage doesn't crunch like that
on the back tooth, but that's nice.
[laughter]
Timmy, will you tell them
about your crown-rack-of-lamb cake?
[Timmy] So it's a banana cake,
salted-caramel buttercream,
and then I have a crunch layer
that's made out of Nilla wafers,
pretzels, and macadamia nuts.
I... I love that.
The cream in here.
[Heather] Wow.
[deep voice] Open it right up. Oh yeah.
[laughter]
I'm not a macadamia fan, but I like this.
When I saw it, initially,
it seemed like the bones were straight up,
but up close,
it looks the least like cake.
[Heather] Agreed.
Now these brussels sprouts,
how did you do that vein work?
I did a little bit of a veiner tool
and then hand painted.
There's a vein tool?
-There's a vein tool.
-Your art form is fantastic.

To me, the rack of lamb,
it was more artistically stunning.
When I look up close,
I'm like, "That looks like bones."
Timmy's crunchiness worked better for me...
Than the sausage ba*ls. Yeah.
Looking at the details, right here,
that lasagna, it's a good-looking cake.
But the other one,
much more real up close.
[Michael] The red sauce gave it away
on Raina's lasagna,
but the cake itself
tastes better than the banana cake.
[Heather] Based on level of difficulty,
both were hard,
but one of 'em was harder.

-We have.
