And then he really wanted to do salmon,
so we're working that in.

kinda jumbled about in the same way,
And I don't know whether to
applaud you for that or take you to task.
What I will say is the sear
on the scallops is exceptional.

And then I let it sit on
low for about 10 minutes.

but I was about 30 seconds

So, brynn, first off,
salmon beautifully seared on top.
That skin nice and crispy. The
braised fennel looks juicy, delicious.
Smart pairing with that. But the
sauce on the outside just looks bizarre.

Don't even look like a sauce.
They look like puréed baby food.

Absolute utter perfection. Skin crispy,
delicious.
The problem is that's
where I want to stop.
The sauce doesn't make sense.
And you have to be careful
with that parsnip purée
'cause once you've
added too much cream,
It just tastes of a cream
purée as opposed to parsnip.
Kolby, god, salmon hasn't
even had the temperature inside.
No seasoning in the purée.
And the sauce, again,
it does not make sense.
Yeah, brynn, I think the cook,
as chef gordon said,
Is exceptional on your salmon.
But I wish you guys
would've been bolder
With a little spice rub on
the salmon or something.
Kolby, I'm somebody that
loves salmon a little under,
But this is egregious.
Brynn's dish is a
successfully cooked salmon
With a crispy skin,
properly cut fennel,
Braised and
seasoned the right way.
And, as we can see here,
on kolby's dish,
This is a series of errors.
It's under-seasoned.
The salmon is not cooked.
Everything that you
see is wrong with the dish
Is actually wrong on
your palate as well.
