It's the simplest shape up there,
so I'm just gonna play off that.

I wanna do something tropical
for keep the same theme.
I'm gonna make an orange cake
with passion fruit, tropical ganache,
and a little bit of rum.

but I'll try to carve the whole cake.

I have. I actually made
a modeling-chocolate Godzilla.

My iguana is on four legs.

a little bit of a gravity-defying cake.
I really need the structure to be sound,
but the thing that I'm most worried about
is making sure that this looks identical
to the decoys in shape, size, and details.
Why you choose the iguana?
So I lived in Miami for, like, ten years,
and iguanas are everywhere,
like, walkin' around your backyard
-like you would see squirrels.
-I know.
Making this iguana cake is taking me back
to my college days in Miami.
I met my husband there.
I met some of my best friends there.
-It was some of the best years of my life.
-[Timmy] What are you working on?
[Caitlin] I'm making a coconut cake
with a key-lime buttercream,
and I'm going to encase it
in a key-lime ganache.
It's one of my bestsellers.
It's gonna match my iguana really well.
I'm really excited about it.
By the skin of my teeth,
I beat out Kristen,
and I am still in this competition.
I've made a lot of sacrifices to be here.
I am missing my kid's
first day of kindergarten,
and it's the longest time
I've been away from my baby,
so I really need to make this worth it

I'm doing a spice cake
with a molasses buttercream,
blackberry filling,
and an oat-pecan crunch.
It's very earthy and deep flavors,
so I think it's gonna pair really well.

I think the most hardest part of my cake
is working on the scales
because the decoys
have perfect round circles.
I wanna try different types of textures.
That looks good, but it's too big.
My plan for the texture in the beginning
is to use net,
but this doesn't work.

So I got the idea to take a straw
and use a straw
for make different sizes of the scales.
The big ones, medium ones, and small ones.
This is my new tool. What do you think?
I think it works really well.
Honestly, it's super smart to use that.
On a real iguana,
it kind of has these, like, weird folds,
and you can see its musculature
and a couple of veins.
So I'm just rolling
little snakes of modeling chocolate,
adding it on the side, and blending it in.
He is standing up,
and he looks really cool!
I feel like I should name him
once he has a head. [laughs]
I'm using my hands, the sugar shapers,
and these little metal Cerart tools
which have very, very small tips
so that I can get in
all the little spots of this iguana
and really kind of make it come to life.
I can't even believe
that I am sculpting what I'm sculpting.
It's coming out way better
than I thought it would.
I'm obsessed with this cake.
I literally don't understand
how I did this.

It's a log, you know?
A log can only be so cool.
I've never made
a hyperrealistic log before,
so I'm gonna have to combine
lots of different techniques.
I'm using a small wire brush
just to go in and make all
the ring texture on the ends of my log.
Once I have the modeling chocolate
on the outside of the log,
I'm gonna go in with sculpting tools
to really enhance all of the details.
-It's lookin' really cool from here.

The ridges and all the raised
and deep areas,
I'm also taking modeling chocolate
so that I can add the knots
and the broken branches
so that this looks like true bark
before the painting even happens.
Are you feeling better about your log
now that it's textured?
[Timmy] I am feeling better about the log.
I think the texture's pretty good.
It's just all the color matching
that's gonna happen
and gettin' those mushrooms right.

different layers to get the right color.
I need an orangey-brown color
as a base layer.
The next step is adding matte petal dust
of browns, grays, yellow, and some green.
It's gonna take hours
to add on all of these layers of color,
but I'm up for the challenge.
It looks like a little more green.
Yeah, I'm gonna go back in with a gray.
I need it to be perfect because I was
in the bottom the last challenge,
and I don't wanna be in the bottom again,
and I definitely
don't want to be eliminated.
I don't think I've ever put this many
layers on anything I've ever painted.

For the tropical ganache,
I used passion fruit, mango, coconut,
strawberry, and banana.
Also a little touch of rum.
This is delicious.
Passion fruit, that's my favorite flavor
in the whole world.
I've never had
passion fruit and chocolate together.
-Didn't know you could do that in a cake.

Who knew snake could taste so good?

It's a spice cake
with a blackberry filling,
a molasses buttercream,
and a pecan-oat crunch.

It feels like a seasonal cake.
-I'm feeling holiday vibes.

I like that there's fruit. It gives you
the illusion that you're being healthy.

growing up in Manhattan,
and this is a snake, I'll tell you.
I like the risk that he took
in doing a passion-fruit chocolate cake.
The flavor profiles I prefer
are in Henderson's cake.
[Sam] Timmy's log, presentation-wise,
this is insane.
-[Danielle] Something out of a fairy tale.
-I love the cream and the fruit.
[Christina] The shape is impeccable.
The design work is impeccable.
However, to me, this felt a little sweet,
and I do feel it's a seasonal cake.
A seasonal cake versus a year-round snake

And they tasted amazing,
