for about as long as I have,

And it felt like the first day
we started cooking.

that it's a seaweed soup,
but think of it more
as a Western-style course meal
made with fish.
We have
braised radishes and scallops on top.
Since it's meant to act
as both a sauce and a soup,
we would greatly appreciate it
if you could enjoy
everything you see in front of you
together in one bite.
The dish our team
decided to prepare for the 100 judges
is an Italian-based tomato risotto.
To create this dish, we added
yu xiang eggplant sauce to the octopus
and sea bream to make
a Chinese-style tomato risotto.

was actually one I had

This one was better.
One thing that really caught my eye
was how hard you were tossing the risotto,
which made me think,
"Why waste so much effort
on something like that?"
Well, I have to say,
all that effort really paid off.
It had the kind of texture
you only find in Italy,
but you used Gyeonggi Rice, right?
How did you create that texture?
The aroma and texture of the ingredients
that went into this dish,
and the way the ingredients were utilized
was really spot-on.
The rice in your dish was cooked
to perfection as well.
Your dish's name,
halibut seaweed soup,
it had an odd ring to it,
so it made me wonder what kind
of seaweed soup it would be.
But when I laid eyes on it,
I knew it was the work
of the White Spoons.
I knew you wouldn't disappoint, Chef Choi.
this is exactly the kind of flavors
I expected from you.
When I'm having soup and it's really good,
I start craving rice.
With yours,
I wanted to dip bread in the soup,
but there wasn't any.
I was impressed you managed
to reinterpret seaweed soup like this.
If we were able to come up with
a lot more Korean dishes like this,
I'm pretty sure that anyone in the world
would be more than willing
to try Korean food
without the slightest hesitation.
