for elimination, Amber was fed up
with Cody and Declan.

The next day,
Chef Ramsay treated the chefs

-to a surprise performance…
-[cheering]

[Ramsay] Criss Angel!

[Kori] Oh, my God.

…that led to a surprise announcement.

Black jackets! That's right.

The battle for the black jackets
began with…

Taste It, Now Make It starts now.

I'm a little nervous.
Really nervous, actually.

Hmm.

-What are you thinking?
-Cauliflower.

The chef who came closest was…

Mary Lou, you get the first black jacket.

-Followed by…
-Declan.

-Yeah!
-Yeah!

Hell's bells, yeah!

The remaining chefs then competed

in the Mystery Briefcase Ingredient
challenge.

-Time to go.
-Cody's pork…

-Visually, it's striking. Good job.

…and Kori's salmon…

Whatever you give me,
I'm gonna create an amazing dish.

The highlight here is that spinach pesto.

-…earned them each a black jacket.
-[exhales]

Ugh, that looks good!

[laughing]

For the final challenge,

Chef Ramsay wanted Nikki and Amber
to be inspired by their past.

Wow.

I'm with my grandma.

That photo actually was taken
in a homeless shelter that we lived in.

-And look at you now.
-You're telling me.

Both women cooked outstanding dishes.

[Ramsay] Delicious.

-That is just cooked beautifully.
-Thank you.

Two exceptional dishes
cooked with heart, soul.

And Chef Ramsay gave the last jacket to…

Amber. Congratulations, young lady.

[Cody] Oh, it cannot get any better.

I'm gonna get in the hot tub.

It's very relaxing to get in the hot tub.
We had a very hard day.

Mary Lou got the first black jacket,

and I feel like tonight
is a very big catalyst for her.

Sometimes at the end of a long day,

Mary Lou is a light at the end
of the tunnel. She's a very honest person,

and it's nice to have someone like that.

[romantic music plays]

-[music fizzles out]
-Hey, guys.

-[Cody] Everything was going smooth.
-Can I come out here?

It basically ruined it.

[sighs]

[Mary Lou laughs]

-I just feel nauseous.
-She's pregnant.

-[Declan] Through the hot tub.

-[man shouting] Ladies and gentlemen…
-[gasps]

…a Black Jacket main event
is about to begin!

Ah! [screams, laughs]

All Black Jackets please report ringside!

-[Cody] Is that Bruce Buffer?
-[chuckles]

Your battle is about to begin!

[laughter]

[Cody] It is Bruce Buffer! What the f*ck?

It's time…

-Oh, yeah.
-…for the Hell's Kitchen knockout!

-[cheering, applause]
-Yeah!

This heavyweight bout features
five fierce warriors.

In the black jacket,
from the Lone Star State,

the Purple People Eater,

she is Mary Lou!

[cheering]

He's the Dublin Destroyer!

He is "Big D" Declan!

-[cheering]
-Let's fight.

She's won in red, she's won in blue,

and now she wants to win in black!

She's the Chi-Town Terror,

Amber!

[cheering]

-[Cody] Yeah.
-Hailing from Los Angeles,

he keeps his California cool
in the Hell's Kitchen heat.

Please welcome Cody!

-[cheering]
-Yeah! Yo.

Damn, these custom intros are lit.

And finally,
she's from the City of Angels,

and she fights like the devil, Kori!

-[cheering]
-[Cody] That's fire.

Ladies and gentlemen, first of all,

give it up for one
of the most prominent voices

anywhere on the planet, Bruce Buffer.

[all cheering]

Vegas has hosted
some of the most amazing fights.

Yes.

In fact, the greatest himself,
Muhammad Ali,

fought in this very ring.

Now, listen carefully.

Great fighters,
they have impeccable timing,

expert accuracy,
and are seriously calm under pressure.

You five will need all these abilities

for today's
individual Black Jacket challenge.

Here's how it's gonna work.

There are five rounds
in this -minute cook-off.

When Bruce announces the start
of each round, leave the kitchen.

Run up here. There'll be a new dome
with five ingredients.

Whatever ingredients you end up with,

you need to figure out how to incorporate
those ingredients into one stunning dish.

Chefs, step up into the ring.

This is gonna be really interesting.
You got to be fast and light on your feet.

-[Declan grunts]
-Everybody ready?

-[Cody] Yes, Chef.
-[Amber] Yes, Chef.

Round one, protein!

Go!

Everybody grabs all the ingredients,

and the only thing that's left
is the veal chop.

-[Christina] You feel good about this?
-I've never cooked veal before.

I've been told by other people, "Treat it
like it's pork." I'll figure it out.

Listen to the bell and listen
for Bruce. Let's go.

[narrator]
For this Black Jacket challenge,

the chefs will be presented
with five different domes.

Excellent.

Each time the bell rings…

Round two, the starch round!

…they must grab one item
from the uncovered dome

and incorporate it into their dish.

-[Cody] Yes, Chef.
-[Declan] It's okay.

I got up last, but there was basmati rice.
I can work with that.

Why don't I use the rice like potato

and make one of
my own favorite dishes-- champ?

Happy with the ingredients?

-Yes, Chef.
-Yes, Chef, so far.

Champ is an Irish potato dish
that we love at home.

You sauté some leeks gently
and some scallions,

make your mashed potato and mix it all up.

This is gonna be one of the best dishes
I've done so far.

Round three, here come vegetables!

[Mary Lou] I see corn, and so I grab
the corn, and I got both hands on it.

Snatch that shit! This is my corn!

-[Christina] Kori, what'd you get?
-Tomatillos.

-[Christina] Did you want that?
-No. Mary Lou snatched my corn.

[Mary Lou] My bad.

She legit snatched the corn from me,
but I grabbed beautiful tomatillos.

It'll be great
with my lobster and my puree.

I'm gonna roast them and make
a nice little creamy salsa out of them

with a little bit of beurre blanc,
make a tomatillo beurre blanc.

-I'm not gonna hold it against you.
-[bell rings]

Round four, your first wild card!

[Cody] Mary Lou starts throwing elbows
a little bit, and so I'm just like,

"Mm-mm, not today."

I get feta cheese. Feta.
f*ck! What do I do with the feta cheese?

That doesn't go
with what I'm doing at all.

-I don't know where I wanna take it now.
-Just think who you are.

Just do you.

I charred some scallions.
I mixed it with the corn.

I throw some of the feta cheese in there.

Taste it.

Damn, Mary, that's good.

-Does this all work together?
-Good. Yeah, it does.

Oh, yeah,
I'm feeling hella confident in this dish.

[Buffer] And now…

-Damn it.
-Move.

It's time for the fifth

and final round!

Think about this one carefully.
Last round.

It's definitely a challenge
when you don't know what ingredients

you're going to need to include
in your dish… Truffle mash.

…while you're trying
to conceptualize a dish.

-Amber, what'd you get, truffle oil?
-Yeah.

I just need to figure out
what I want to do.

The sweetness from the cream

should help marry the truffle oil
in the sauce for the filet.

[Ramsay] Ninety seconds to go.

-Do you see any plating spoons?
-[Kori] They're on your tray.

Yes! Good job, Cody.

[Ramsay]
Thirty seconds to go. Make it count.

[Christina] Last touches, very nice.

[Ramsay] Five, four, three, two…

-Every second counts.
-…one and serve.

-[exclaims]
-Well done.

Okay. I brought in a true heavyweight
to be our guest judge today.

He is a James Beard Award winner
and the owner and head chef

at the magnificent Los Angeles restaurant
Providence.

Please welcome Michael Cimarusti.

[Cody] What?

-Damn.
-What?

Man, homeboy from Providence?

This gentleman is a new standard
for California cuisine.

-Wow.
-Welcome back to Hell's Kitchen.

Thank you. It's nice to be back.

This is how it's gonna work.
I'll call you one at a time.

You'll come up,
present the dish to Chef Michael.

The first person
will take the champion's chair.

The big question is,
can you stay in champion's corner,

or are you gonna get knocked out?

The chef who's in champion's corner

after all five dishes
have been tasted wins.

-Understood?
-Yes, Chef.

First up, Declan, please. Let's go.

-Good luck, D.
-Thank you.

It looks good. For his style,
that's Declan on a ten.

[Ramsay] Describe the dish, please.

So, I've done a oven-roasted chicken
butter-basted with garlic and thyme.

Then for the starch,
I turned the basmati rice

into an Irish dish
that we do at home called champ.

Tastes nice. It's homey, lots of texture.
The pancetta is really nice on top.

Everything that's there has a purpose,

and it serves that purpose well,
so well done.

-I liked it.
-Thank you very much, Chef.

Take your dish and sit
in the champion's corner.

Yeah! I'm in the ring
that Muhammad Ali has fought in,

and I'm sitting there
in the champ's chair. Brilliant.

Amber, let's go, please.

I always feel like Declan's food
is a little bit lacking.

You know my dish is better than his.

So, I have prepared for you today
a Yukon mash with a filet,

and then I have finished the dish

with a little bit of a poblano
and truffle cream sauce.

What the f*ck is that?

That's a hot mess, just like you, Amber.

You're not hot, but you are a mess.

Truffle was one of the items
you had to grab at the end?

-Yes.
-[Michael] Truffle oil's a tough thing

-to put into any dish.
-[Ramsay] Yeah.

I think the dish lacked, I thought,
a little bit of acid

to really lift it
and make it more compelling.

Chef, big question is, does it knock
Declan off the champion's chair?

I think we gotta keep Declan over there.

-Yeah!
-Wow. Well done, Declan.

-Thank you very much.
-Good effort.

-Not good enough, thank you.
-[Amber] Thank you. Oh, God.

I'm pissed off about this, %.

Up next, Mary Lou. Let's go, please.

[growls] It's time to make Dad proud.

Describe the dish, please.

What I have in front of you
is a veal chop.

The base is a parsnip puree with
some pickled corn, some charred scallions,

feta cheese, crème fraîche,
and there's a bit of lemon juice on top.

[Ramsay]
It taste as good as it looks?

It tastes really good.
Overall, it's a very refined dish.

Thank you, Chef.

-ex*cuted to a very high level.
-[Ramsay] Good job.

Chef, big question is,
does she knock out Declan,

or does she keep Declan in the chair?

This is a tough one.

[narrator]
It's the third round in Chef Ramsay's

first-ever Black Jacket
Championship Knockout Challenge.

-This is a very refined dish.
-Thank you, Chef.

And Mary Lou is hoping to take over
the champion's chair from Declan.

Pound for pound, you'd have no idea
that Mary Lou could topple somebody

the size of Declan, but with this dish,
I think you've done it.

-Thank you, Chef.
-Yeah.

Declan, move.

The lightweight takes the chair,
and the heavyweight leaves the ring.

[Cody] I'm not really surprised
that Mary Lou beat Declan.

Declan's dish was amazing,
but Mary Lou's really turned shit up.

We have a new champion.

Question is, can anyone knock her out?

Cody is gonna try. Let's go, please.

Chef Michael is a huge influence
on the kind of food that I do.

To say this means a lot
is a vast understatement.

Visually, I think it's nice.
It's very modern-looking.

There's all sorts of restaurants
that you could see a dish like that.

Describe the dish, young man.

At the base, we have a couscous
that is hydrated with chicken stock.

The halibut is seared
and then basted with thinly-sliced garlic,

green onions, and, uh, za'atar and thyme.

There's tons of flavor there.

-I think the halibut's a little bit salty.
-Heard, Chef.

You know, that's not easy to do
'cause halibut's a fairly bland fish.

Is it a knockout punch?

No. Mary Lou is fine over there.
She's looking good, yeah.

The question is,
will Mary Lou go the distance?

We have one more round.

Let's see if Kori
can knock her flat on her back.

And, of course, the best is always last.

You might not be sitting there too long.

I tapped into my roots. I'm Latin.

I did a tomatillo salsa
along with a couple of kumquats

and poached the lobster tail
a little bit in white wine,

and it's kind of that Peruvian ceviche
kind of flavor to it

with all the components.

It's minimalistic,
but it delivers on flavor.

-Thank you.
-[Michael] Overall, like,

that is a pretty accomplished dish
for minutes.

-Thank you, Chef.
-Chef, tough question.

Does Kori's dish knock out
Mary Lou's incredible chop?

That's tough to say.

I think both should come over,
and we should raise one of their arms.

-Isn't that traditional in a fight?

The grossest part about the trash today
is definitely the maggots.

-[flies buzzing]

I'm sick of the moaning
and the complaining and the tears.

It's like we got the band back together
but still have one disgruntled member--

This is a huge advantage
over everybody right now.

We also have a nice,
beautiful adobo steak.

I'm thrilled, I'm ecstatic,
and I get to eat steak!

[Jason] How's it feel to win
the first Black Jacket challenge?

Oh, man,
I just feel like I've grown so much.

You've won the last challenge, set
the momentum for tonight's dinner service.

How you feel about dinner service tonight?

-I'm concerned about Amber.
-Yeah?

-The boys think that Amber is emotional,

and Amber keeps proving that she is
because she's getting emotional.

The boys put her up
for elimination so many times,

she feels like they're just trying
to push her out.

We have to calm her down,
pull her off the ledge.

-Like, every day, and it scares me.
-[Jason] Yeah.

Chef Jason, what do you, uh, recommend us
with working with the boys?

Communication is a big thing.

You just got to find
that sort of sweet spot.

If you can, sort of, sync eyes
with them and get on the same page,

I think it'll be a pretty good,
solid team, 'cause they can cook.

It's working with the two boys that I…
I don't know how it's gonna happen.

I don't know if Declan's gonna
be the nice teddy bear

or if he's gonna turn
into the angry grizzly bear.

[Jason] It's a competition.

Everybody has their way
how they're gonna get to the finish line,

but you guys have an opportunity
to follow Christina in her footsteps

and be the chef for arguably
one of the best chefs in the world.

And that's unbelievable.

Chef Ramsay put me on fish for a reason.

The one time that I've gone down
really bad in Hell's Kitchen

was the night I worked fish station
on the Blue Team.

I'll have to fire a new piece of fish.

I feel very confident

When you're a leader,
you lead through others.

I know that I have

because of my leadership style.

as well as cleanliness

and taking pride in your personal
appearance and your station,

and I feel like those skills of mine
are stronger than Declan's, Chef.

Declan also has a bit of a temper,
and so, for me,

you need to be able to approach a leader,

and sometimes I've had difficulties
trying to talk to him

when he's in that zone.

It's not a temper. It's just the passion
I have for cooking all the time.
