We got rid of the cancer
that was on the team, and that's Marc.

Now the three of us, Cody, me, and Amber,

Welcome to the first ever Spells Kitchen.

Oh, man, I love game shows.

I love game shows.

Chefs, this challenge
is really designed to understand

which of you can think quickly
on your feet.

In each round, each chef,
one from each team,

will head up to the podium.

Then, a scrambled ingredient
will show on the screen.

Blue Team, what is that?

[all] Bell pepper, Chef.

Very good. Answer correctly,
you get to choose to keep the ingredient,

and you'll assign that ingredient
to those proteins,

or send it to the opposing team.

If you get an answer right,

you can choose to kind of sabotage
the other team.

That's a fun little twist.

Mary Lou and Amber, step up to the podium.

-[Jordan] All right, Mary Lou, let's go.
-[Nikki] Come on.

[Declan] Come on, Amber.

Here is your first scramble.

[buzzer sounds]

-[Ramsay] Amber.
-Fennel.

That is correct.

Is the fennel gonna go
with the rib eye, halibut, the veal chop,

or you wanna pass it to the Red Team?
What would you like?

We're gonna take it on the halibut.

Take it on the halibut.
Right, second scramble. Here we go.

-[buzzer sounds]
-[Ramsay] Amber.

-Swiss Chard.
-[Ramsay] Well done. Swiss chard.

Hey, I'm failing a little bit.

Dang. She's so good with these letters.

You gotta go on a game show.

have to bring the spinach to life.

-Veal chop, Chef.
-[Ramsay] Here we go.

Okay, now we're doing parsnip.

Gonna put the cauliflower
with the rib eye, Chef.

-Okay, we'll put it on the veal.

-Asparagus.
-Correct.

-We'll put that on our rib eye as well.
-[Ramsay] Nice move.

[buzzer sounds]

Pineapple.

Is it a keeper or a sender?

I'm gonna sabotage them with this one.

I'm gonna put that pineapple
where it just doesn't belong.

I'm gonna put that with their halibut.

Ouch. Smart move, Nikki.

[Cody] So, I'm going up against
little old Mary Lou.

She's hella cute.

This is a fun-ass matchup.

[buzzer sounds]

Watercress?

-[buzzer sounds]
-Basmati rice?

[buzzer sounds]

-Tomato.
-Well done.

We'll send it to their rib eye.

We'll put the basmati rice on our halibut.

Pass that to the Blue Team,
and put that on their halibut.

-[Ramsay] Welcome back, Mary Lou.

[laughs sarcastically] Sucker.

[buzzer sounds]

Fingerlings.

Goes well with your veal.

That's where it's going, Chef.

[buzzer sounds]

-Celery root.
-[Mary Lou] Boom.

Chef, we will keep that for our rib eye.

[buzzer sounds]

Pearl onion. Take it for the veal, Chef.

One ingredient left.

Come on, Kori. Get this last one.

-[Mary Lou] Oh, that's a good one.
-[Jordan] Come on.

-Amber.

-Avocado.
-That's correct.

[narrator] With the Blue Team's board
already full of ingredients,

Amber has two choices.

You can put avocado on their halibut
or you can eliminate one of yours.

I'm thinking to myself,
"Right, if we got an avocado,

we can get rid of the pineapple."
It's simple.

We'll put the avocado on their halibut.

What the hell? Amber, you made a mistake.

You all keep that shitty pineapple.
We don't want that. [chuckles]

All boards are complete.

Right now, I'd like the teams to decide
on which chef is cooking which protein.

Now, Red Team, because you have four,
one of you is gonna have to double up.

I feel comfortable with the rib eye.

-We can work on the halibut.
-Yeah.

-I'll do the veal.
-I want the rib eye.

Pineapple can be a bitch of an ingredient
because it can be incredibly overpowering.

But if I can make this work,
that's an opportunity to shine.

Red Team, Blue Team,
your minutes start now.

[narrator] In today's challenge…

[Declan] We got minutes,
guys and girls.

We got this in the bag.

…each chef must prepare a dish

with their chosen protein
and its assigned ingredients.

All right. Aprons on.
Um, so, what are you doing?

[Mary Lou] I think I'm gonna make
an avocado compound butter.

[narrator] Mary Lou and Nicole
will each cook a halibut dish.

The avocado, I'm not quite sure yet.

[narrator] And the team will decide
which dish to present to Chef Ramsay.

[Mary Lou] I've never done this before.
It's all in my head.

The avocado is gonna be
the most challenging piece

of this ingredient list.

It is a little bit difficult
to apply to a random halibut dish.

Come on, avocado, talk to me.

Tell me what you wanna be
when you grow up.

[Christina] Just over , guys.

-[Jordan] Heard, Chef.
-Heard.

I need this fat spot to cook.

The thick part in this veal chop,
I'm a little worried about.

I don't want it to be undercooked.

Damn it, is this still too soft

Somebody come feel this.

I'd give it a quick flash
with some butter, but real quick.

Hopefully it doesn't screw me.

This has gotta go back in for a second.

There's minutes left.

-Fifteen minutes, heard.

I'm feeling pretty good right now.

I'm hella excited. I decided to go with
the pickled pineapple and the vinaigrette.

-[Amber] What you thinking?
-Banging.

This halibut salad's gonna be fire.

-Yes!
-Don't get cocky

-till after he eats your food, at least.
-Yeah. Yeah.

Just over eight minutes, Blue Team, yes?
Eight minutes. Thank you.

[Amber] Come on.

For my rib eye,
I don't have a hard enough sear

and I'm running out of time…

so I throw a pan on it.

It's kind of the quick-and-dirty way
to get it done,

but you risk tearing apart the rib eye.

[Cody] What's that? What's burning?

f*ck me. Did that really just happen?
g*dd*mn it.

[Declan] You confident, Amber?
You all right?

Aw, f*ck.

[narrator] With just a few minutes left
in the cooking portion

of Chef Ramsay's Spells Kitchen challenge…

[Cody] What's that? What's burning?

f*ck me. Did that really just happen?
g*dd*mn it.

…Amber must now scramble
to salvage her rib eye.

Uh, fish spatch, fish spatch, hold on.

Toss it to me. Toss it.

Incoming. Nice catch.

[Amber] g*dd*mn.
This is where I freak out.

This is the earliest
I've ever plated in my entire life.

Plating is always my worst attribute.

But today, I am insanely proud of my dish.

Ninety seconds to go.

[Nikki] Oh, this is so salty.

It's totally over-seasoned.

But unfortunately,
there's no time to correct it now.

-If anything, add acid.
-We good to start plating, everybody?

Make sure all components
are on the plate.

[Ramsay] Five, four, three…

-Oh, g*dd*mn it.
-…two, one, and serve. Good.

Mary Lou, Nikki,
you've made the halibut.

Decide amongst you which one
is the best to put forward.

I'm worried
about my salty rice, so…

-Okay, cool.
-[both] Mary Lou.

Put Mary Lou's up
and keep yours down, then.

So, Red Team, whose dish are you dropping?

We're dropping Nikki's
and going with Mary Lou's.

Right. First up,
the battle of the rib eye. Let's go.

-Let's go, Kori.
-[Declan] Go on, Amber.

Oh, Ms. Amber.
I'm gonna smash you like the buzzer.

-Amber, describe your dish first, please.
-Yes, Chef.

So, I have a pan-seared rib eye,
roasted cauliflower

and a watercress puree.

Why were you pressing your rib eye?

I pressed it because
it didn't have a sear in one part of it.

[Ramsay] It looks thin.

-Rib eye's cooked beautifully.
-[Amber] Thank you, Chef.

I thought it was gonna be
a little bit sort of over, but it's not.

Super powerful in flavor.

Nice, clever utilization
of the three ingredients.

-Thank you, Chef.
-[Ramsay] Really good dish.

[exhales]

[sighs]

Kori, describe your dish, please.

I did a mustard-veal demi,

and the rib eye, pan-seared it
real quick on both sides,

with a celery root puree on the bottom.

And the asparagus,
I did a nice red wine vinaigrette.

-[Ramsay] Steak's cooked beautifully.
-[Kori] Thank you, Chef.

Really beautifully.
Love that asparagus salad.

You've highlighted three ingredients.

God, it's really tough.

Two well-ex*cuted dishes.

Uh, the point…

…is gonna go to Amber.

[Declan] Yes.

-And Kori. Well done.
-[Jordan] Yeah!

-[Ramsay] Good job.
-[Kori] Thank you.

-Really good job indeed. Amazing.

Next up, the battle of the veal chop,
please. Let's go.

[narrator] Jordan will attempt
to outshine Declan's veal

with her roasted parsnips
and broccolini served over…

A white cheddar polenta.

-[Ramsay] Cooked beautifully.
-[Jordan] Thank you, Chef.

Polenta's absolutely spot-on.
Veal, delicious.

But parsnips, just to be cubed like that,
some big, some small.

It just needs a bit more finesse,

-especially at this stage of the game.
-Yes, Chef.

[sighs] Damn you, parsnips.

Declan, describe the dish, please.

So, Chef, we have a pan-roasted veal
with rustic crushed potato.

[Ramsay] So you left the skin on
the potatoes and the skin on the eggplant.

Yes, Chef.

-Veal's delicious.
-Thank you, Chef.

Both dishes
need just that little touch of finesse.

But the heroes are the veal.
The point goes to…

[exhales]

-…both of you. Well done.
-Yeah.

-Well done.
-[Ramsay] Good job.

Two-two.

So now it's still a tie. Damn it.

Somebody has to pull this out of the bag.

Down to the battle
of the halibut. Let's go.

-Come on, girl. Bring it.
-[Declan] Come on.

You got it.

It comes down to me.
The pressure's on my shoulders.

This is my time to shine.

The halibut starts off
being pan-seared.

I put a little bit of heat in there
with chili flakes.

On top, there is
a pickled pineapple vinaigrette

and grilled pineapple to make the salad.

I can tell it's cooked beautifully
'cause the knife goes through like butter.

Look at that.

Wow. Little bit too heavy
on the chili flakes.

But what steals this dish
is what you've done with that pineapple.

You've defied the odds, and it does work.

I keep bringing this shit home,
and it feels so good.

Mary Lou, describe your dish, please.

Chef, I have a pan-seared halibut
with a whipped guacamole,

and then it has a rice pilaf
with the spinach in it.

Look at that, glistening.
Beautifully cooked.

Thank you, Chef.

But that smear, it looks like the inside
of my granddad's f*cking underpants.

[Declan snorts]

Everything else looks lovely and rustic,
but this thing here…

-[inhales sharply] …ay-yi-yi.
-I'm sorry about that, Chef.

Both of you take the dishes back

Chef just pretty much shat
all over my plating technique.

But I feel like all my flavors are there,
so I think that I can still win.

[Ramsay] Both halibuts nailed.

Now it's down to tiny details.

and then be treated to the most amazing

I'm making sure I'm doing a cannonball,
and I'm gonna saturate Amber.

[laughs]

And Blue Team, I have a very special treat
waiting for all three of you in the dorm.

Now, ladies, while the Blue Team
is lounging poolside,

you're all gonna be hard at work here.

You'll be preparing, by hand,
tuile cookies.

This cookie batter sets within seconds
after it comes out of the oven.

Then you have to throw
the entire pan away.

You have to roll them while
they're still hot.

and then they all break.

I'm a big dude, and I love barbecue.

When did you start cooking?

-How old were you?

And I was messing about at first,

and then I started to get
really serious about it.

It's cool 'cause
the more hard work you put into it,

there's, like, a direct correlation with,
like, you know, the result.

[Declan] For sure.

I always cooked when I was younger,
but then when I left home,

I was like, "You gotta make money
and pay rent right now."

-"What are you gonna do?"
-Yeah.

All I did is just keep cooking.

And I've been addicted ever since.

Cooking has absolutely changed my life.

I mean, not only has it allowed me
to travel around the world,

but it's put me in front of
a lot of influential people.

All of a sudden,
I'm cooking for Sam Smith,

or even for P. Diddy, you know?

And now I'm in Hell's Kitchen,
and I'm not done yet.

[Jordan] Ladies,
you all have a real talent for cookies.

two remarkable charities

that are helping countless people.

These nights are extremely important,

so bear that in mind
when you're cooking this evening.

Red Team, you'll be cooking
for the Sarah McLachlan School of Music.

This amazing charity
provides free music education

to thousands of underserved
and at-risk kids.

Growing up, I had an at-risk counselor
and stuff in high school

'cause my mother had gone to prison
and things like that.

And without music
to get me through some tough times,

I probably wouldn't be sitting here
in this chair,

so this is something
I can really get behind

and I'm really excited about.

for The Chris Long Foundation.

They support bright futures
for communities

by bringing in clean water
to developing countries.

And because the Blue Team
only has three members,

Declan will also manage
the pan-roasted filet against Jordan.

Both teams will prepare
sticky toffee pudding for dessert.

so I'm cooking the portions

to make sure that it's done right.
