[chefs] Surf and turf!

[narrator] Chef Ramsay used
a classic American menu item


as a way to test the chefs' palates.

[Carmen] Crab and venison.

-[Carmen] Okay.

[narrator] He challenged both teams
to identify the proteins


in a variety of surf and turf dishes.

-Oysters and venison.
-[Ramsay] Yes!

[narrator] Even though
she's a pescatarian...


[Ramsay] No!

[narrator] Donya and her partner, Sandra,
struggled to identify the correct fish.


-[Ramsay] It's wrong!
-Oh!

[narrator] And Raneisha and Sammi
had their issues as well.


-[Raneisha, Sammi] Chicken and scallops!

-Rabbit and monkfish.
-Yeah!

That was the most stress
I've ever had in my life.

[narrator] As for the Blue Team,

Brad and Jermaine had a momentary lapse.

It's surf and turf, you donut!

-Turf and turf.
-Let's get it!

[narrator] But with Dahmere
motivating his teammates...


-Try branzino?
-Just bring a damn fish!

[narrator] The Blue Team were
much faster than the Red,


and they earned their third challenge win
in a row.


-Yes!

Scallop to the pass!

[narrator] ...Raneisha and Sandra
on the fish station were in deep water


right from the start.

[Ramsay]
Just touch how overcooked they are.

And then to top it off, raw lobster.

So I've got no idea
what the f*ck is happening right now.

[narrator] Also in an upstream battle
was Melissa on garnish.


Melissa, can you confirm?

Two lamb, two strip, two halibut.

-No.

[narrator] And while both teams struggled...

I saw you wrap them in foil,
which is the worst thing you can ever do.

to complete service on a high note.

had to send someone packing

This dynamic, moving forward,

is going to be interesting.

Everyone, like, thinks
they're a f*cking leader, but they're not.

After another tough dinner service,

Chef Ramsay hopes to lighten the mood

by kicking things off
outside of Hell's Kitchen.

[Ramsay] Rise and shine!

[Sandra] Soccer.

I think I got a mean kick, but aiming?
That's a whole 'nother thing, so...

[inhales sharply, groans]

People from all over the world
come to the US to chase their dreams,

and they bring
their ethnic cuisine with them,

creating an amazing melting pot.

The melting pot has generated
some of the most amazing fusion cuisines.

That's why, for today's team challenge,
I'm combining two of my favorite things...

fusion and football.

Do we have any footballers here?

Yes. Little league, Chef.

-What position do you play?
-The goalie, Chef.

-You're not tall enough for goalie.
-[chefs chuckling]

Let me explain how this is gonna work.

Behind me are two full goals
with targets attached,

representing nine amazing cuisines.

One chef from each team
will kick a soccer ball.

Whatever target you hit,

those will be the two cuisines
that you have to fuse together

to make an incredible dish.

-Understood?
-[chefs] Yes, Chef.

Now, here's a very special treat.

This man is a dear friend of mine.

A National Soccer Hall of Famer,
Alexi Lalas.

[chefs cheering, applauding]

[chef] Oh, my God.

Alexi Lalas? Oh, my f*cking God.

-Alexi, you mind showing me how it's done?

you know who this guy is.


Talking about celebrity shock right now.

What are you gonna go for, first?

I like me some Greek.

Right, let's mix some Greek cuisine
with some French cuisine.

Let's kick things off.
Let's start with Ryan.

Nominate someone that you want
to go up against on the Red Team.

-Raneisha, Chef.
-I knew he was gonna say my name.

[Ramsay] Raneisha.

I'm gonna try and go for French
or Italian, Chef.

I don't think Raneisha
is classically trained in French cuisine.

I am, so you know,
you gotta play to your strengths.

-[Jermaine] Let's get it, Ryan.
-Let's go, Ryan.

-[Brad] Okay!
-[chefs] Yay!

There we go. Well done.

Well, since he said Italian,
I guess I'ma sh**t for Italian.

Interesting form.

-Well, sh*t. Japanese.
-[Ramsay laughs]

French-Japanese.
What an amazing combination.

I've never prepared Japanese cuisine.

I've only eaten it,
so we'll see how this goes.

-Donya is going against...

Mexican and Spanish. Okay.

at Japanese and Thai.

Finally, Jason is going against Sammi

from the winning team

[Santos] Immediately, I can see
you're going Thai end.

-Yeah, on the sauce.
-Yep.

I'm not gonna lie, I don't cook
a lot of Thai food or Japanese food.

On the Japanese,

-these are mustard greens, right?
-That's mizuna.

-Mizuna?
-Yep.

But I'm really inspired
by what I'm seeing.

How about you?

-I have French and Japanese, Chef...
-Yep.

...so I'm gonna do a poke bowl.

I'm gonna do seafood lightly
poached in a beurre blanc.

Before I came here, my family,

we're, like, one paycheck away from poor.

Winning Hell's Kitchen
would change my life.

It would be the American Dream

because I could actually
take care of my kids


the way I want to.
This is what I'm here for.


I'ma go ahead and incorporate
that duck breast.

-[Raneisha] And then a little cheese.

I'm putting the grapes in the rice.

Have you ever cooked skirt steak before?

Growing up in South Side Jamaica, Queens,

all I can remember are those
Spanish and Mexican flavors.

-[Santos] Steak tacos, basically?

But, like, a steak taco paella.

Listen, Donya and I have gone
head to head in the past,

and she's from Bronx, New York,

but I'm bringing it home
for South Side Jamaica, Queens, baby.

-Y'all come bite down?

I got orzo working.

-[Christina] Lamb rack.
-[Sandra] Lamb.

Going to sear that off.

I got a sear going on there,
and I wanted a nice crust.

Nice, golden brown, sexy.

[scoffs] My lamb's on fire.

That's very toasty.

That's okay. A little char?
Not gonna hurt nobody.

There's flavor in char.

I just hope they're not
completely overcooked.

I've cooked a lot of different Greek food.

It's one of my favorites.

And then Indian food,

it's definitely not something
that I go towards when I'm cooking.

Okay, this is not working.

It's very stressful right now.

And then what's the sauce with it?
I'm sorry.

-The raita. I'm just getting it now.
-Where is it?

-I haven't made it yet.
-What the f*ck?

What are you dicking around like this for?

[Ramsay] Seventy-five seconds to go.

I am lost in my dish a little bit,

and I totally forget about my sauce.

fusion phenomenon.

All right. So good to have you here.

What's been the big secret
to combining cuisines?

Fusion is not necessarily
a combination of flavors.

It's more of how do we make

two different flavor profiles
h*m* cuisine.

Tony Messina... that guy is legit a legend,

so I'm over here sh1tting bricks.

Right, first up
will be Spanish and Mexican.

Donya and Jermaine.

Back at home, I like to coin myself
as an urban fusion chef.

I like to take things that is new,
and I mix it and improve it.

Let's start off with you, Donya, please.
Describe your dish to Chef.

Arroz con dules and a enchilada.

Yeah, it looks like
it's just come out of Mexico City.

It's charming. It's rustic.

Seasoning-wise, it's great,
but the beef is... is pretty leathery.

It's pretty overcooked in there.

Right. Jermaine, describe your dish.

So what we have is a paella-inspired
carne asada taco on the top

without the taco.

-What did you cook the rice in?
-I cooked the rice in a, uh, pot.

[chuckles]

-Oh, my God.
-No, stock.

-Obviously in a f*cking pot.
-Sorry.

-[chuckles]
-Veal. Veal stock.

[Ramsay] Veal stock.

Steak is cooked nicely.

-I wish it had some spice to it.
-Yes, Chef.

A dab of smoked paprika
when you're blasting that rice.

You have two interesting dishes.

Is the point going to the
Blue Team or the Red Team?

The winner of this round is gonna go to...

-Jermaine from the Blue Team.

I brought it home

I have no hope for this dish right now.

to serve this to two amazing chefs.

the Blue Team's lead.


Yes, what we have is
a pork chop livornese.

Great sear on the chop.

Pork chop, nice and tender.
It's a no-brainer.

This one's certainly gonna go
to the Blue Team.

With the Blue Team still undefeated

in this challenge, up next is...

Greek-Indian. This should be fascinating.

Sammi and Jason, let's go.

I'm very nervous because
time just got the best of me,

but everything is plated,

so I am hoping that the flavors are there.

I have a Greek-inspired kebab,

and then I have tzatziki
raita sauce on the side.

I love the sauce.

I think your meat is a little overcooked,

but the sauce kind of makes up
for the slightly overcooked part

-of the dish.
-Mm-hmm.

Jason, describe your dish to Chef, please.

We have a yogurt
and sumac-crusted chicken thigh.

Way too heavy on the char.

-Did you want that much color on there?
-Yes, Chef.

-What is this?
-Roasted dates.

Can you come here for a second?

-Just hold that.
-Yes, Chef.

-Rock hard.
-Do you wanna eat that?

No, Chef. Understood.

This one is gonna go to
Sammi from the Red Team.

-Red Team, well done.

Devon hopes to take the momentum back

Chinese barbecue chicken with a Thai rice.

So when I think Thai food,
I think bright, acidity...

-Yes, Chef.
-Spice.

I didn't get much of either.

and Thai basil salad...


-The fish is cooked properly.

-It's just not enough acidity.

Prawn and langoustine poached
in a tarragon butter sauce.

Shrimp nailed beautifully.

and Spanish-inspired duck.

-Yeah, it's a shame.

The seasoning is absolutely bang on point.

-This round is gonna go to the Red Team.

his miso-glazed sea bream

-I infused my rice with Brie and grapes.

Brie, yes.

The cheese. Yes, sir.

And then I did some langoustine and duck
for my protein.

Resembling a poke bowl?

Yes, a poke bowl.

All right, I'm looking for bright,
vibrant flavors with poke.

This is dark, brown, and gray.

A langoustine's a very delicate,
beautiful piece of shellfish.

To cover it with Brie and duck,
you kinda lose it.

[narrator] With a bit of fusion confusion...

-What a shame.
-[narrator] ...the point has to go to...

The Blue Team.

-[Ramsay] Wow. All right.
-Thank you, Chef.

Okay, it's now 3-3,

and it all comes down

-to the Japanese-Thai fusion.
-You got it.

Carmen and Johnathan, let's go.

I'm going up against Johnathan,

who is one of the strongest
chefs in this competition,

and this is a great chance
to continue to prove myself.


I made a Japanese-inspired salad
with miso soy dressing,

and I topped it with a pan-fried snapper.

-My fish is crispy. I love the dressing.
-Great job on the fish.

Overall beautiful dish. It's just tight,

-and it screams Japanese to me.
-Thank you.

Right. Johnathan, describe
your dish to Chef, please.

You have, uh, brown butter
and soy-glazed sea bream.

And then I made a lime oil
that I drizzled in there for some citrus.

I like that you gave me the whole fillet.
It's properly cooked fish, period.

It's something we strive
for on a daily basis...

the sheen and the glaze.

Pick up your dishes, and both of you
go back in line, please. Thank you.

Those last two dishes, exceptional.
